Your highlight of the trip?
The highlight of the trip was definitely spending my 30th wedding anniversary dinner at the legendary ‘Eden Rock’. Based on a stunning peninsula on the North coast of St Barts, with a spectacular view of the Caribbean Sea and home to the most memorable sunsets, the food was the best I’ve ever tasted.
St Barts in 3 words?
This is very difficult! But if I had to choose, it would be sophisticated, charming and breathtaking!
Your favourite beach on the island?
Anse du Gouverneur on the South coast. Why? Because it’s secluded and the epitome of a picture-perfect Caribbean hideaway.
Did you encounter any unusual wildlife during your stay?
My favourite four-legged friend was a tortoise found wandering around our villa garden (we named him Fred!). We also saw Iguanas, hummingbirds and huge, colourful fish in the insanely, clear waters of Gustavia harbour.
If you had to eat one dish from your visit again, which would it be?
Without a doubt, it had to be my anniversary meal at Eden Rock – Nut and Seed Crusted Red Snapper with Sweet & Sour Jus. Absolutely sublime!
